IOS Password Timeout

I chose to not store the password on my IOS device but whenever I open BoxCryptor I have immediate access to my files. Only after I use the kill the app from the multitasking function does it ask me for the password again.

Shouldn't there either be an option to set a password timeout, or at the very least either expire it immediately after exiting the app?

As it is now, anyone can pick up my device and have access to my files without needing to know the encryption password.

The issue you describe is by design. So BoxCryptor only asks for your password on startup (to access your encrypted folder).
To secure your device while BoxCryptor is running in the background you may purchase BoxCryptor Unlimited and use the App Unlock PIN which always has to be typed in when BoxCryptor starts from the background.
